I often enjoy a smoothie bowl for breakfast or a midday snack, but sometimes an extra kick of caffeine is needed to help this busy mom get through the day. I had some left over coffee that I had kept in the fridge from the day before, so I decided to put it to use in this Mocha Chia Pudding bowl.
Here is my recipe for quick Mocha Chia Pudding:
1 Cup Cold Coffee
1 Cup Nut Milk (I used Unsweetened Cashew Milk)
1/4 Cup Chia Seeds
1 tsp Cocoa Powder
1 Tbsp Maple Syrup
In a high speed blender, blend together all ingredients until smooth.
Pour into a bowl, and top with granola. I used the Crunchy Coconut Granola that I made the other day, and it was delicious.
*Tip: I loved my Mocha Chia Pudding eating it right away, but if you prefer a thicker consistency, refrigerate overnight. The chia seeds will thicken the pudding even more as it sits.
