This baked quinoa makes a delightful side dish, and really could be a meal on it’s own; maybe add some baked tofu, and a side salad to complete the meal. Lemony Baked Quinoa with Asparagus is super easy to make, with less than 5 minutes prep time, the hardest part is waiting for it to bake!
Ingredients:
1 Cup Quinoa
1 Cup Chopped Asparagus Spears (cut approximately 1″ long)
1 Tbsp Nutritional Yeast
1 Tbsp Dried Rosemary
1 tsp Lemon Zest
2 Tbsp Lemon Juice
2 Cups Vegetable Stock
Method:
Preheat Oven to 350′
In an oven safe baking dish, stir together all of the ingredients.
Bake for 45 minutes.
