I made these Peanut Butter Oat Squares around the same time I made Peanut Butter Chocolates, and they were delicious. These squares make perfect treats for all of the peanut butter cup lovers in your life.
The Home Baked Vegan’s Chocolate Peanut Butter Oat Squares are relatively easy to make, and sure to be a crowd pleaser. They also freeze well: Once the treats are cooled out of the oven, just cut into squares, then separate them and freeze on a pan. Once frozen, you can toss them all together into a freezer safe storage container, ready to thaw out whenever you need them.

Ingredients:
Base:
1 Cup Whole Wheat Flour
1 Cup Oats
1 Tbsp Cocoa Powder
1 tsp Baking Powder
1 Cup Almond Milk
Chocolate Peanut Butter Filling:
1/2 Cup Peanut Butter
1/2 Cup Chocolate Chips
Topping:
1 Cup Oats
1/4 Cup Whole Wheat Flour
1 tsp Cocoa Powder
1/2 tsp Baking Powder
1/2 Cup Almond Milk
Method:
Preheat the oven to 350′
Prepare the base:
In a large bowl, mix together the flour, oats, cocoa powder and baking powder.
Add the almond milk and stir together until combined and no large dry lumps remain.
Pour the batter into a parchment lined or silicone 8″ square pan. Even out the batter with a wooden spoon to ensure the bottom of the pan is evenly covered.
Prepare the filling:
Melt chocolate chips.
Stir in the peanut butter until smooth and all melted together.
Evenly spread the filling into the pan on top of the batter in the pan.
Prepare Topping:
In a medium bowl, mix together the oats, flour, cocoa powder and baking powder.
Stir in the almond milk.
Using a tablespoon, evenly place the batter on top of the chocolate peanut butter filling. Use a wooden spoon or your fingers to lightly press the batter evenly over the filling.
Bake the squares at 350′ for 40 – 45 minutes.
Remove the pan, and let cool before slicing into squares.
