Blueberry Oat Crunch Bars

Blueberry Oat Crunch Bars are like healthy, individual sized blueberry cobblers. Actually they are quite reminiscent of the apple crumble granola bars you can buy at the store (except without the extra sugar, oil, animal products, etc.) My Blueberry Oat Crunch Bars are made with oats, whole wheat flour, no oil, and no processed sugar.

These make great snacks, and a perfect breakfast for busy, on-the-go mornings. Make a batch of these oat bars and keep them in an airtight container so they are ready to go when you are. 
Here is my recipe for Blueberry Oat Crunch Bars:


Ingredients:

1 Cup Oats
1 Cup Whole Wheat Flour
1/2 tsp Cinnamon
1/4 Cup + 2 Tbsp Pure Maple Syrup
2 Cups Blueberries (fresh or frozen)
2 Tbsp Corn Starch
Method:

In a large bowl, mix together oats, flour, cinnamon, and 1/4 cup of maple syrup. 
Set aside 1/2 Cup of this mixture to use as the topping. 
Press the remaining mixture into the bottom of a silicone or parchment lined 8″ square pan. 
In another large bowl, mix together the blueberries, 2 Tbsp maple syrup, and corn starch. 
Spread blueberry mixture evenly over top of the oats in the pan. 
Evenly sprinkle the 1/2 Cup of oat mixture that you previously set aside, on top of the blueberries. 
Bake at 375’ for 45 minutes – 1 hour, or until  the blueberries start bubbling, and the oats on top start turning golden brown.
Let cool, then cut the bars into squares.
