I know it’s not nice to boast or brag, but these really are the best brownies, and it’s just an added bonus that they are vegan friendly! Try this recipe for chewy, fudgy, delicious chocolate brownies:
2 Tbsp Ground Flax
6 Tbsp Water
1 Cup Sugar
1/2 Cup Vegetable Oil
1 tsp Vanilla
1 Cup Flour
3/4 Cup Cocoa Powder
1 tsp Baking Soda
1 tsp Baking Powder
1/2 Cup Chocolate Chips
In a small bowl, mix together flax seeds and water, and set aside for 10 minutes.
In a large mixing bowl, mix vegetable oil and sugar together.
In a medium bowl, mix together the flour, cocoa powder, baking powder, and baking soda.
Once the flax mixture has sat for 10 minutes, stir it in to the oil and sugar, and add the vanilla.
Stir the dry ingredients into the wet ingredients.
Fold in chocolate chips.
Pour into a non-stick 8″ square baking pan and place in oven for 20-25 minutes (or until a toothpick poked into the center of the brownies comes out clean).
Remove from oven and let cool before removing from the pan.
