A low maintenance dinner, like this one pan baked Spanish rice, is perfect for busy weeknights. No fussing over a stovetop, just add everything to your pan, and leave it be in the oven till the timer goes!
Here is my recipe for Vegan Spanish Rice:
3 Cups Vegetable Stock
2 Tbsp Tomato Paste
1/2 tsp Oregano
1/2 tsp Ground Cumin
1/4 tsp Salt
1 Yellow Bell Pepper
1 Orange Bell Pepper
1 1/2 Cups Rice
1 1/2 Cups Black Beans (Cooked or Canned)
Preheat oven to 350′
Dice Peppers and Onion and set aside.
In a 9 x 13 oven-safe baking dish, mix together vegetable stock and tomato paste until tomato paste is blended in without large clumps.
Add remaining ingredients and stir to make sure the rice is all covered.
Bake in oven for 45 minutes.
