Here is the recipe for The Home Baked Vegan’s Blueberry Phyllo Pastries:
1 Cup Blueberries
1/4 tsp Cinnamon
1 tsp Corn Starch
1 Tbsp + 1 tsp Maple Syrup
2 tsp Brown Sugar
4 Phyllo Pastry Sheets
Preheat oven to 375’
In a medium bowl, mix together the blueberries, cinnamon, corn starch and 1 Tbsp of maple syrup.
Place 1/4 of the mixture on a phyllo pastry sheet, and fold into rectangle, tucking in the sides as you fold. Place on a lined baking sheet. Repeat this for each pastry.
Brush the pastries with the remaining 1 tsp maple syrup, and evenly sprinkle brown sugar over the pastries.
Bake for 15-20 minutes, until golden brown on the edges.
