These Protein Cookies are not only packed with protein, but they are also gluten-free, soy-free, egg-free, dairy-free, and free from refined sugars. These are probably the healthiest cookies you will ever eat, but you’d never guess (unless you make them yourself) because they are sweet and delicious, just as a cookie should be. Enjoy these cookies on their own, or drizzle some lemon infused icing on top for a little something extra.

Here is the recipe for The Home Baked Vegan’s Gluten-free Lemon Protein Cookies:
1 3/4 Cups Gluten-free Oat Flour
1 Cup Vitality Elevate Plant-Based Protein Powder, Vanilla
1 1/2 tsp Baking Powder
1 Cup Raw Cashews
1 Ripe Banana
1/2 Cup Water
2 tsp Lemon Zest
1 Tbsp Lemon Extract
Place cashews in a small pot with water, and bring to a boil. Boil for 15 minutes.
Preheat oven to 350′
Drain and rinse the cashews, then add the cashews, banana, water, and lemon extract to a blender or food processor and blend until smooth.
In a large bowl, sift together the oat flour, protein powder, and baking powder.
Transfer the liquid ingredients into a large mixing bowl, then add the dry ingredients and lemon zest.
Using a mixer, mix together the ingredients until a uniform dough forms.
Roll the dough into balls approximately 1″ in diameter. Place each dough ball on a lined baking sheet.
Press each dough ball down with a fork (or use your thumb).
Bake for 10 – 13 minutes, or until the bottoms of the cookies turn golden brown.
Let cool and enjoy!
