Ingredients:
1 3/4 Cups Gluten-free Oat Flour
1 Cup Vitality Elevate Plant-Based Protein Powder, Vanilla
1 1/2 tsp Baking Powder
1 Cup Raw Cashews
1 Ripe Banana
1/2 Cup Water
2 tsp Lemon Zest
1 Tbsp Lemon Extract
Method:
Place cashews in a small pot with water, and bring to a boil. Boil for 15 minutes.
Preheat oven to 350′
Drain and rinse the cashews, then add the cashews, banana, water, and lemon extract to a blender or food processor and blend until smooth.
In a large bowl, sift together the oat flour, protein powder, and baking powder.
Transfer the liquid ingredients into a large mixing bowl, then add the dry ingredients and lemon zest.
Using a mixer, mix together the ingredients until a uniform dough forms.
Roll the dough into balls approximately 1″ in diameter. Place each dough ball on a lined baking sheet.
Press each dough ball down with a fork (or use your thumb).
Bake for 10 – 13 minutes, or until the bottoms of the cookies turn golden brown.
Let cool and enjoy!
