Cilantro Lime Black Beans Recipe
Cilantro Lime Black Beans are a delicious side dish served both warm or chilled. With just a few ingredients, this Mexican inspired dish is easy to make, and you can have it ready in less than 20 minutes. Try it on salad, tacos, or as a side dish with any of your other favorite meals, I served it here along side some Vegan Gluten-Free Corn Bread.

Here is the recipe for The Home Baked Vegan’s Cilantro Lime Black Beans:
Ingredients:
1 Small Onion
2 Garlic Cloves
1 tsp Olive Oil
1 1/2 Cups Black Beans, cooked or canned
1/2 tsp Cumin
1/4 tsp Salt
2 Tbsp Lime Juice
1/4 tsp Lime Zest
1/3 Cup Cilantro, chopped
Method:
In a medium saucepan, heat the olive oil over medium-high heat.
Sautee the onions and garlic in the oil for 3 – 5 minutes or until the onions are translucent.
Add the Black Beans, Cumin, Salt, Lime Zest and Lime Juice.
Bring to a boil, then cover and reduce to a simmer. Cook for 15 minutes, stirring often.
Stir in Cilantro before serving.
