Vegan Roasted Dill and Garlic Potatoes Recipe

Potatoes are a staple ingredient in many households, and for good reason – they are packed with nutrients, they are so versatile, and usually pretty inexpensive too! I use potatoes in many dishes added to soups and curries, or as a main ingredient in dishes like gnocchi or perogies. My favorite way to enjoy potatoes is lightly seasoned and roasted. They even taste amazing refrigerated and tossed with vinaigrette, like in this roasted potato salad. The potatoes in this recipe are drizzled with olive oil, and roasted with dill and garlic and just a pinch of salt.

Ingredients:
2.5 lb Red or Yellow Potatoes (Approximately 6 medium potatoes)
1 Tbsp Olive Oil
1/2 tsp Salt
2 tsp Dried Dill
3 Garlic Cloves, minced


Method:
Preheat oven to 375′ F
Chop the potatoes into large bite-sized pieces. 
Toss all ingredients together in a large bowl, until the potatoes are evenly coated with oil and seasonings.
Place the potatoes in a single layer in a 9 x 13″ baking dish (or lined sheet pan).
Bake for 30 – 35 minutes, or until tender when pierced with a fork.
