Oatmeal Apricot Cookies

Oatmeal Apricot Cookies is a fun twist on classic oatmeal raisin cookies. They are soft and chewy, with a hint of cinnamon, and made with dried apricots. Oatmeal cookies are perfect to enjoy on their own, or with a cup of tea or coffee. This recipe for Oatmeal Apricot Cookies makes enough for a bakers dozen, so you can get about 13-14 cookies out of the batch of dough. I love baking a dozen cookies in the oven, and freezing the extra dough in individual balls . That way, if I get a craving for cookies later on, I can bake just one or two at a time in the toaster oven.

Ingredients:

1/3 Cup Vegan Butter

3 Tbsp Sugar

1/2 Cup Brown Sugar

1 tsp Vanilla Extract

2 Tbsp Water

2 Tbsp Vegetable Oil

3/4 Cup All Purpose Flour

1 tsp Baking Powder

1/4 tsp Baking Soda

1 tsp Cinnamon

1/4 tsp Salt

1 1/4 Cup Rolled Oats

1/2 Cup Diced Dried Apricots

Vegan Oatmeal Apricot Cookies

How to Make Vegan Oatmeal Apricot Cookies:

Preheat the oven to 350F. In a large mixing bowl, cream together the vegan butter, sugar, and brown sugar. Mix in the vanilla, water, and vegetable oil. In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt. Stir in the oats. Add the dry ingredients into the wet ingredients and mix until a smooth dough forms. Add the diced dried apricots and mix until they are evenly distributed through the dough. Roll the dough into 1 1/2″ balls, and place them evenly spaced on a parchment lined baking sheet. Bake at 350F for 11-13 minutes. Let cool and enjoy!
