This vegan Apple Cinnamon Coffee Cake is simple to make, and so delicious. It is spiced with cinnamon and nutmeg, and not overly sweet, which makes it perfect as an after dinner dessert, or even as a morning treat with coffee. The Apple Cinnamon Coffee Cake recipe is baked in a square pan, so it can easily be cut into squares – perfect for sharing.
Alternatively, you could bake this Apple Cinnamon batter in muffin tins or a loaf pan – however the baking time would need to be adjusted accordingly. These would be perfect as muffins to toss into a school lunch since they are nut-free, making them school friendly.
I baked this particular cake for a birthday recently, and served it dusted with icing sugar. Wait till just before serving it to dust the icing sugar on top, Otherwise it will melt into the cake. How to Make Vegan Apple Cinnamon Coffee Cake
Ingredients
1 Cup Coconut Milk
1/2 Cup Apple Sauce
1/2 Cup Water
1 tsp Vanilla
1/4 Cup Vegetable Oil
1/2 Cup Sugar
1/2 Cup Brown Sugar
2 Cups + 1/4 Cup All Purpose Flour
2 tsp Baking Powder
1 tsp + 1/2 tsp Cinnamon
1/8 tsp Ground Cloves
1/8 tsp Nutmeg
1/4 tsp Salt
1 Apple
Preheat the oven to 350F.
Peel the apple, and dice it into small pieces, (no bigger than the size of small peas). Toss the apple pieces in a bowl to coat them with 1/4 Cup Flour and 1/2 tsp Cinnamon.
Set aside. In a large mixing bowl, mix together the vegetable oil, sugar, brown sugar, vanilla, water, apple sauce, and coconut milk.
In a separate bowl, sift together the flour, baking powder, cinnamon, cloves, nutmeg, and salt.
Mix the dry ingredients into the wet ingredients then stir in the apples.
Pour the batter into a parchment lined 9″ square pan, and bake for 33-35 minutes, until a toothpick inserted into the center of the cake comes out clean.
