Creamy Coconut Rice

Creamy Coconut Rice is a tasty side dish perfectly paired with mangos, black beans, avocado, cilantro… you name it! This is a very simple recipe for coconut rice made on the stovetop.

Here is the Home Baked Vegan’s Recipe for Creamy Coconut Rice:

Ingredients:
1 1/2 Cups White Rice
2 Cups Coconut Milk
1 Cup Coconut Water
Method:
In a medium sauce pan with a lid, mix together the rice, coconut milk and coconut water. 
Bring to a boil, stir, then reduce to a simmer. 
Cover and let cook for 15 minutes.
