Roasted Potato Salad is a tasty spin on a classic side dish. Potato Salad is a tasty side dish, traditionally made with boiled peeled potatoes, mayonnaise, onions, and a variety of other vegetables and seasonings. Roasted Potato Salad isn’t your run of the mill potato salad. This chilled side dish, is made with roasted baby potatoes, seasoned lightly, and dressed in vinaigrette.
The Home Baked Vegan’s Roasted Potato Salad is:
Vegan (As always, this means this recipe is free from any animal products)
Here is the Home Baked Vegan’s recipe for Roasted Potato Salad:
1 1/2 lb Baby Potatoes
1 Tbsp Olive Oil
1/2 tsp Salt
1 Tbsp Dried Oregano
2 Green Onions
1/4 Cup Sugar
1/4 Cup Apple Cider Vinegar
1/4 Cup Olive Oil
Preheat the oven to 375′
Slice potatoes into bite-sized pieces (either halves or quarters).
Coat the potatoes in olive oil, salt, and oregano.
Place the potatoes on a baking sheet, and bake for 30-35 minutes, or until tender.
Let the potatoes cool in the fridge.
Dice the green onions, and set aside.
Prepare the dressing: Mix together the sugar, apple cider vinegar, and olive oil, shake or stir rapidly until combined.
Once the potatoes are cool, add the green onions and dressing to the potatoes, and toss until the potatoes are all coated in the vinaigrette.
