I haven’t actually decided if this is still technically considered avocado toast, or if it would be considered more an open faced sandwich. Either way, this vegan sandwich / avocado toast is epic. It is so easy to make too! With fresh ingredients, there is no real cooking required (aside from toasted the bun), so it is a wonderful way to treat yourself to something delicious for lunch even when you’re pressed for time.
You can purchased balsamic reduction/glaze at the grocery store, or you can make it from scratch. I have some from the store that I keep in the pantry, which is perfect for adding a quick drizzle to your vegan sandwich or avocado toast – whatever you decide to call it. You will also need: ciabatta buns, avocado, baby arugula, tomato, and pea shoots.
Ingredients:
1 Ciabatta Bun
1 Avocado
1 Tomato
1/2 Cup Baby Arugula
10g Pea Shoots
2 tsp Balsamic Reduction
Method:
Slice the ciabatta bun in half to make two flat slices. Toast them in the toaster or toaster oven. Mash half of the avocado onto each slice of the toasted bun. Slice a tomato and place the slices on top of the avocado. Top with pea shoots and arugula, and drizzle them with balsamic reduction.
Epic Avocado Toast
This vegan, Avocado Toast Open Faced Sandwich, is made on a ciabatta bun, and features fresh ingredients and balsamic reduction.
Ingredients
- 1 Ciabatta Bun
