It is sweet and slightly tangy, great for tying this salad together.

Meal Prep: Healthy Pasta Salad

You can easily make extras of this salad for a meal prep. Add some cooked rigatoni pasta to make a complete meal for lunch. If you do choose to add pasta, place the noodles on top of the salad in the storage container, or leave the dressing on the side, and mix together before serving (otherwise, the pasta noodles will soak up all of the salad dressing if it sits in the fridge overnight).

How to make Chickpea Salad with Sweet Onion Dressing

Ingredients:

1 Can Chickpeas

1/2 Long English Cucumber

1 Bell Pepper

1/2 Cup Grape Tomatoes

1 Small Red Onion

1/4 Cup Sweet Onion Dressing

Method:

Drain and rinse a can of chickpeas.

Dice the cucumber and bell peppers. Slice the grape tomatoes in half. Finely chop the red onion.

Add the vegetables and the salad dressing into a bowl with the chickpeas, and toss.
