Chickpea Salad with Sweet Onion Salad Dressing is perfect for a side dish or as a filling main salad for lunch. This is a great dish to make when you are short on time, as no cooking is required and it is still full of flavor! I love the fresh ingredients, like tomatoes, peppers and cucumbers, paired with a homemade zesty salad dressing. The chickpeas in this salad are also loaded with protein, making this a filling and healthy salad. The homemade salad dressing is made with red onions. It is sweet and slightly tangy, great for tying this salad together.
Meal Prep: Healthy Pasta Salad
You can easily make extras of this salad for a meal prep. Add some cooked rigatoni pasta to make a complete meal for lunch. If you do choose to add pasta, place the noodles on top of the salad in the storage container, or leave the dressing on the side, and mix together before serving (otherwise, the pasta noodles will soak up all of the salad dressing if it sits in the fridge overnight).
